Inici\u00e1 separando 350 gramos de chocolate negro de cobertura y 50 gramos de mantequilla\u00a0para la elaboraci\u00f3n de una ganache de chocolate\u00a0con la que rellenar. Reservar.<\/p>\n<p>2. En primer lugar,\u00a0fund\u00ed el resto del chocolate de cobertura (60 gramos). Para ello lo troceamos y lo calentamos en el microondas. Usamos golpes de calor cortos, de 30 segundos, para evitar que se queme y removemos entre golpe de calor y golpe de calor. Repet\u00ed la operaci\u00f3n tantas veces como sea necesario hasta que el chocolate se haya fundido.<\/p>\n<p>3. Por otro lado, mezcl\u00e1 la leche con el zumo de lim\u00f3n, remov\u00e9 y lo dej\u00e1 reposar por 15 minutos.\u00a0La leche se cortar\u00e1 y su textura se asemejar\u00e1 a la del yogur, pero esto es precisamente lo que buscamos.<\/p>\n<p>4. Mientras el chocolate se enfr\u00eda y la leche reposa,\u00a0prepar\u00e1 tres moldes de 20 cm de di\u00e1metro\u00a0en los que vas a cocer el bizcocho. Engras\u00e1 el molde y coloc\u00e1 papel encerado en la base.<\/p>\n<p>5. Encend\u00e9 el horno a 180\u00baC, arriba y abajo, y\u00a0comenz\u00e1 la preparaci\u00f3n de la mezcla. En un cuenco amplio tamiz\u00e1 la harina, el cacao, el polvo de horear y la sal.<\/p>\n<p>6. Con una batidora, bat\u00ed los 150 g restantes de mantequilla junto con los dos tipos de az\u00facar hasta que la mezcla est\u00e9 cremosa.<\/p>\n<p>7. A\u00f1ad\u00ed los huevos, de uno en uno. Agreg\u00e1 la vainilla y remov\u00e9 hasta incorporar.<\/p>\n<p>8. Incorpor\u00e1 el chocolate derretido. A velocidad suave, bat\u00ed hasta que est\u00e9 totalmente incorporado. A\u00f1ad\u00ed los ingredientes secos, altern\u00e1ndolos con la leche.<\/p>\n<p>9. Agreg\u00e1 el agua hirviendo y remov\u00e9 hasta incorporar.<\/p>\n<p>10. Vert\u00ed la mezcla en los tres moldes, en cantidades iguales, y los introducimos en el horno, a media altura. Horne\u00e1 por\u00a020 minutos aproximadamente.<\/p>\n<p>Para el ganache:<\/p>\n<p>1. Calent\u00e1 la crema dulce en una olla, cuando alcance el punto de ebullici\u00f3n, la retir\u00e1 del fuego y a\u00f1ad\u00ed el chocolate troceado.<\/p>\n<p>2. Tap\u00e1 y esper\u00e1 cinco minutos hasta que el chocolate se funda con el calor residual.<\/p>\n<p>3. Transcurrido este tiempo, a\u00f1ad\u00ed la mantequilla y remov\u00e9 hasta obtener una mezcla homog\u00e9nea.<\/p>\n<p>4. Introduc\u00ed la mezcla en una manga pastelera y\u00a0dejamos enfriar antes de utilizar.<\/p>\n<p>5. Para\u00a0montar el pastel, extend\u00e9 el ganache de chocolate sobre uno de los bizcochos, coloc\u00e1 otro encima y cubr\u00ed de nuevo con ganache. Termin\u00e1 colocando el tercer bizcocho encima.<\/p>\n<p>6.
